Half of the grapes were fermented whole-bunch carbonic for three weeks and the other half fermented entirely whole-cluster but open top with gentle hand plunging for roughly a week

2023 Podere Le Ripi 'Canna Torta' Bianco Toscana IGT, Tuscany, Italy Leon Boesch Margarita Vineyard Cabernet SauvignonThis is an amphora fermented, skin contact white composed of roughly 50% Vermentino with the balance Trebbiano and Malvasia, all organically grown. Fermentation with native yeasts takes place with the skins in terracotta for about three weeks, followed by twelve months in concrete to settle naturally; the wine is bottled without added sulfites
